Beanie-Burger and Baseball — Summer Recipes and Memories ( from Lisa Wingate)

Happy Monday, everyone, and happy first of March!  I don’t know what it’s like where you are, but around here, spring blew in like a lion.  And, as usual, this time of the year finds moms like me rustling up the blankets, the ear muffs, the stadium seats, and heading out to the first baseball games of the season

Growing up, trapped at baseball fields for hour, upon hour, upon hour while my brothers played, I’ll admit, I dreaded baseball games.  Those long, boring evenings were only tolerable if there happened to be another little sister in the stands — one who was roughly my age, and just as bored as I was.  If there happened to be a patch of woods, a climbing tree, or a storm ditch nearby, baseball days were even a wee bit fun.  I caught my first serious case of poison ivy while building weed forts at a baseball game with another little sister.  We both knew those vines in the weeds we were harvesting were poison ivy.  We were both proud to be immune to poison ivy.  We were both wrong.

After that, weed-fort-building was stricken from the list of mom-approved activities for passing the time at baseball games.

I’d always pictured that, as a grown-up mom, I wouldn’t have to make rules like that.  My life would be filled with tiny pink ballet shoes, fluffy tutus, glittery little dance costumes.  Instead, I find myself hanging out with these guys:

It’s different when they’re your baby boys and not your snotty ol’ brothers.  And tell me the truth — isn’t that little shortstop second-from-the-back just about the cutest thing ever? Sometimes it’s okay when history repeats itself.

And speaking of history repeating itself, we’re sharing favorite picnic recipes this week.  Here’s one that my mother often made when summer outings took us away from home.  It’s simple, inexpensive, and kids love it.  It’ll feed a crowd or a whole team of healthy eaters.  Kept warm in a insulator, it’s ready to serve up at a moment’s notice:

Beany-Weanie-Burger

It’s super easy.  You can throw it together in a few minutes before you leave for the baseball field, then leave it in the oven with the timer set, or cook it and take it along to a potluck picnic.  Served with a little bread or cornbread, it’s an easy meal-in-one.

Ingredients for a 9 x 12 pan:

2 cans baked beans

2 cans ranch style beans (drained if they’re soupy)

3/4 cup brown sugar (more or less depending on how sweet you like it)

1 lb hamburger browned and crumbled

1 pkg of hot dogs sliced up

1/4 cup ketchup (add a bit at a time and adjust to taste)

3T mustard (add a bit at a time and adjust to taste)

Dump baked beans, drained ranch beans, cooked hamburger, hotdog slices in pan:

Stir in sugar, ketchup, mustard (taste as you go — depending on the brands you use and how sweet you like your beans, you may need more or less)

Bake at 350 degrees for 1 hour or until the beans boil down and thicken.  For a full meal, mix up some cornbread and put in the oven for the last twenty minutes.  For a picnic, serve with bread and some summer veggies or berries.

Light-n-Fit For the New Year — Smoked Turkey Taco Soup

Happy FIRST MONDAY OF 2013, everybody!  I hope this Monday finds you just as fine as a frog hair and getting back into the normal routine.  Here in our little corner of Texas, the kids are heading back to school, the holiday leftovers have either been finished up or tossed out, and now it’s time to get serious about those New Year’s Resolutions.  If your resolutions look like mine, you’re about to get busy working off the chocolate-covered confections, pecan pies, cups of eggnog, heapin’ helpin’s of mashed taters, and all the other off-the-scale yum-yum good eatin’ that goes with the Christmas free-for-all.

Just in case you’re working on getting back in shape, too.  We thought we’d share light recipes and work-out tips this week.

My favorite work-out tip:  Make workout time your reading time.  Having a good book to read while I’m on the elliptical machine not only makes the time pass quickly, it helps me convince myself to head out to the exercise room in the first place.  Diving into a story is like a little reward for all that hard work.

Here’s a new, easy-breezy light recipe we’re enjoying at our house:

 Smoked Turkey Taco Soup

2 cups shredded or chopped smoked turkey

8 cups chicken broth (more if you want it more soupy)

1 can white beans (drained)

1 can black beans (drained)

1 can pinto beans (drained)

1 lg can Mexi-corn (drained)

Salt and pepper to taste

Buy some thick slices of smoked turkey at the deli, or buy a smoked turkey breast, or use leftovers from Thanksgiving.  Shred or chop.  Combine all ingredients in pot, simmer for 30 minutes.  Serve over a few tortilla chips (use the baked kind or a shredded corn tortilla for fewer calories).  Sprinkle with a dab of grated low-fat Mexican-blend cheese or grated cheddar.

Yum!  Good and guilt-free.  Even the spoon is happy!

I asked some of my Facebook friends to chime in and share their calorie-saving foods or workout ideas too:

 Janice:  One of my instructors said if you do these three exercises everyday it will change your body: push-ups, squats, and crunches. She also says cardio makes you smaller but weight training changes your shape.
  Another one – I don’t remember exactly how it was worded but the gist of it is – no amount of workout will make up for a bad diet.


 Patricia:  Nothing tastes as good as being healthy feels.


Dena:  I love doing Zumba! Great workout and toning and its fun! I strive for three one hour workouts a week. It’s a very good stress reliever also.


CeCe:  Drink water.            





Carla: Strawberry – spinach smoothies!






Rachel: One never regrets a workout.

Anita: Remember – Round IS a shape!





Rachel: Put a dollar in a jar every time you workout. Then treat yourself to, say, a book by Lisa Wingate. 


Julie:  Baked oatmeal- whole rolled oats soaked over night in a casserole dish (in milk or water). In the morning add raisin, dates, and slivered almonds, pecans, or walnuts, top with a little brown sugar and cinnamon and bake at 300 for about 45 minutes.  Then for exercise afterwards, go outside and play frisbee with your dog(s). It’s a great weekend treat!






Susan: Exercise tip!! Get a puppy. One that will grow into a large(ish) dog that NEEDS to run daily to keep its energy level inside the home at a reasonable and tolerable level. Begin walking and running with it as soon as it understands the leash isn’t for eating. Repeat at least twice daily. For life. It works. I know. Just got a puppy in November. Started walking and running this week. Already feel lighter.

Rachel’s suggestion is my personal favorite ;o) but I love them all.  May this be the year all your resolutions come to pass… or at least, all the ones that matter most.

The Yummy-Scrummy, No-Bake, No-Fail, Holiday Dessert That is Really Really(!) Bad for You…But Still…

I’m writing from the road this week, and feeling a little scattered…stalking random hotspots for free wifi and trying to post before my blinking orange battery symbol turns red…(this is all really just my excuse for being a lousy cook and giving you the easiest, no-bake, no-fail recipe ever invented).

That said, this Christmas, if you’re looking for a quick, chocolate, yum-alicious dessert that every sweet tooth will love, go for Oreo balls (call them bon bons and make them look fancy, but we all know they’re just crushed Oreos with more bad stuff squished in.)

What you’ll need:

1.       One pack of Oreo cookies. I use the regular ones, but if you’re feeling inspired go wild and do the double stuff.  (Mint might work too, who knows? I’m no chef. I don’t stray from the recipe. And still…the fire alarm goes off every time I cook. WHY???)

2.       One 8 oz. carton of cream cheese. I use Philadelphia (because I like the shiny silver box) and to make myself feel less guilt about eating Oreo balls, I use the low fat version (but really, what’s the point?)

 
3.       One pack of Almond Bark or similar chocolate candy coating (You can use vanilla too. Pick your poison.)

That’s it…all healthy, organic, chemical-free ingredients, right? Whatever. I’m a sustainable farmer who strives every day of the year to feed my family home-cooked, wholesome meals (that part is true. Really, it is.) So…when I have a reason to stray from our hand-milked goat cheese and plain vanilla goat yogurt, I tend to go a little nuts. Like that kid in the candy shop who has never been allowed to eat sugar. Yep, that’s me.

 

Now for the fun part…

What you’ll do:

1.       Use a food processor to crush the Oreos (a few at a time) and place finely crushed cookie crumbles into a large bowl. (Do this step quickly or your risk eating the Oreos before you make the pretty little desserts.)

2.       Mix crumbs and cream cheese until thoroughly combined. (Tip: Spray your hands with Pam to reduce the ooey, gooey, sticky mess…and still…it’s ooey and gooey. Kids love to do this, by the way. Kids and weird people like me who still like to make mud pies.)

3.       Form mixture into small balls and freeze until firm.

4.       Melt candy coating according to directions and dip frozen Oreo balls into melted chocolate coating.

5.       Set on wax paper to harden/cool.

6.       Optional: Melt vanilla coating and drizzled pretty swirls or zigzags over chocolate coating. You may also want to sprinkle finely chopped nuts or candy canes onto the coating before it dries. For Christmas, you may also want to make them completely white with red and green shiny, sparkly, sprinkles … bring on the bling!

Many options exist for these kind of bite-sized desserts. And I’m certain every single alternative would be healthier than this. But…if you want a dessert people devour and ask for more…try this simple, ooey-gooey no-fail recipe for Oreo balls, and you’ll be the hit of the Christmas party. Promise.
