Dreams, Charm, and Afternoon Tea Parties
Oh my goodness, thanks, Shellie, for asking me to the recipe swap on SouthernBelleView! I know for a fact there’s no one with more southern charm than Shellie. I’ve read her books and had conversations with her, so it’s entirely possible that Shellie was in the fringes of my brain when I wrote my latest book set in a southern charm school (they called them finishing schools back in 1962 when the story takes place).
In Sweet Dreams, mismatched cousins—neither of whom fit in with the other girls—are put to their first test when they host a mother-daughter tea. Dusty hasn’t had a mother since she was three years old, and the last person Paisley want to come to the tea is her mother who has moved them around the country like a game piece on a Monopoly board. You’ll have to read the book to see what happens, but I will share with you the recipe for the chicken salad cream puffs the girls served at the tea.
4 cups cooked chicken breasts, chopped fine
1 cup chopped celery
½ cup toasted pecans, coarsely chopped (toasting makes the difference and gives it a touch of the South!)
½ cup real mayonnaise (may use lite mayo, if desired)
½ cup sour cream
Salt and pepper to taste
Blend mayonnaise and sour cream with salt and pepper. Fold in other ingredients. Chill for several hours or overnight. Spoon into miniature cream puffs right before serving.
Miniature Cream Puffs
½ cup water
¼ cup butter (the real stuff)
1/8 tsp. salt
½ cup flour
Combine water and butter in a medium saucepan and bring to a boil. Add salt and flour all at once and mix until a ball is formed. Add eggs, one at a time, and work into mixture until satin smooth after each one. Refrigerate for an hour. Place teaspoon full on lightly greased baking sheet two inches apart. Bake at 400 degrees for 15 to 18 minutes until lightly browned (they will sound hollow when tapped with a spoon). Cool, cut off tops, and fill with chicken salad. Replace tops. These are best if made the day you will be serving them.
Shhh! Sometimes I cheat and serve the chicken salad on mini croissant rolls and it’s just as yummy, but the cream puffs are fun! And it’s fun being on the porch with you ladies today! Thanks for having me.
